Specifically, OLIGOMATE® promotes the growth of bifidobacteria, a helpful microorganism found in the human intestines. It is also extremely resistant to acid and heating during food processing. What is OLIGOMATE®?

Structure of the main constituent of galacto-oligosaccharide

  • OLIGOMATE® is a galacto-oligosaccharide that contains oligosaccharides found in breast milk(4'galactosyllactose)as the main constituent.

  • OLIGOMATE® promotes the growth of bifidobacteria and lactic acid bacteria, which are the beneficial bacteria in the intestines.

  • OLIGOMATE® is a functional sweetener that contains 55% or more galacto-oligosaccharide and is manufactured by the action of enzymes on lactose.

Improvement of intestinal flora

Growth of bifidobacteria in the intestines can be promoted by consuming 2.5g per day(*1) of galacto-oligosaccharide.

Increase in bowel movement was obserbed by consuming 5g per day(*2)of galacto-oligosaccharide.

Non-digestibility

Galactooligosaccharides reach the large intestine without being broken down in the human digestive tract.

Thus, they are sugars that are not easily converted into energy by the body.

Change in the concentration of hydrogen excreted in the breath after oral ingestion of galactooligosaccharides by healthy adults(average for 16 people)

Low cariogenicity (does not easily produce dental cavities)

Galactooligosaccharides cannot be used in the growth of Streptococcus mutans, the bacteria responsible for dental cavities.

Sweetness

Relative sweetness

OLIGOMATE® 55N has a refined sweet taste, without any characteristic aftertaste.

The degree of sweetness of 32, when sweetness of sucrose is set as 100.

Heat and acid resistance

OLIGOMATE® 55N is stable when heated under acidic conditions and shows extremely high heat stability compared to sucrose.

For there reasons, there is no concern for degradation during the processing of food products.

OLIGOMATE® 55N has excellent moisture retention properties, and the food product maintains the appropriate amout of moisture when OLIGOMATE® 55N is added.

Storage stability

Storage stability at room temperature (average 23.2℃)

OLIGOMATE® 55N remains stable for up to one year when stored at room temperature. It therefore does not require special care for long-term storage or distribution.

*OLIGOMATE® 55NP (powder) must be handled carefully, as it easily absorbs moisture.

Browning

Degree of browning in the presence of amino acids

OLIGOMATE® 55N has a browning ability (using the Maillard reaction) that is intermediate to that of sucrose and isomerized sugar. This quality can be used to brown foods nicely.

OLIGOMATE® 55N shows a slightly higher viscosity than isomerized sugar.
